Turkey Burger, Farfalle, and Tomato Basil Sauce- 9 Smart Points

 

 

I LOVE to cook so I figured I should put some of my Smart Point recipes up!

I have really been craving some pasta lately but its usually high in Smart Points- about 6 or 7sp for 2oz uncooked. But when I went grocery shopping the other day I found that Barilla makes a pasta called ProtienPlus- 5sp for 2oz uncooked. Ya it’s only 1 point less than regular pasta but hey, the lower the better IMO! Next time I go shopping I’m going to try Barilla White Fiber pasta because it’s the same point value as the ProtienPlus and I’ll let you know how which one I think is better!

Another issue I have found is that all store bought pasta sauces have points!! GRRRRR!!! So I made my own with fresh basil from the garden and Costco brand (Kirkland) organic canned diced tomatoes. (You will see a trend- I fucking love Costco)

So here is what I threw together for meal prep day!!!

Turkey Burger, Farfalle, and Tomato Basil Sauce

Makes 4 portions @ 9 Smart Points each!

  • 8oz Barilla ProtienPlus/White Fiber Farfalle Pasta (weighed dry)
  • 1/2 cup Reduced Fat Shredded Mozzarella Cheese (divided 4 ways)
  • 2 cups Fresh Spinach (divided 4 ways)
  • 4 Kirkland Turkey Burgers
  • 2 Tbsps. Parmesan Cheese (grated)
  •  1 can Kirkland Organic Diced Tomatoes (or similar with 0 sp)
  • 1.5 cups Fresh Basil
  • Season the tomato sauce to your liking- I used Italian seasoning, garlic powder and onion powder

Cook turkey burgers as per instructions and break into bite size pieces when they are done. Cook pasta as per instructions. When the pasta is done to your liking strain and rinse under cold water to stop the cooking process (I don’t like mushy pasta, ICKY) Puree/blend/emulsify tomatoes, fresh basil, parmesan cheese, and whatever herbs and shit you want. I used a hand emulsifier. Divide cooked pasta between 4 containers. Then top with fresh spinach, pieces of turkey burger, tomato sauce and the mozzarella cheese. Then those bitches are done! You can freeze these if you want and pull them out the night before you want them or just eat them for the next couple days. Pop those bad boys in the microwave and you are good to go!
